Katherine Acosta, 79, passed away July 29, 2025. A lifetime Puebloan, Katherine was born March 26, 1946 to John and Patsy Arellano, Who precede her in death; along with her husband of 57 years, Nick Acosta, son Dennis Acosta, sisters Delores Gonzalez and Juanita Carillo, and brother in-law Ronald Mitchell.
Katherine was a graduate of Central High School, and retired from Colorado State University Pueblo in 2006. She was very involved with the TRIO programs at CSU-P. Upward Bound, Student Support Services, and Educational Opportunity Center. She approached every task with precision and pride, earning a reputation for her efficiency and unwavering dedication to excellence. But most importantly, Katherine was a pillar of faith in the Acosta family. She loved the Lord with all her heart, mind, and soul. Katherine was devoted to teach her husband, kids, and grandkids about the love of Jesus. Sharing Bible stories, praying with them, and leading by example what it meant to walk with Him—because to her, there was nothing more important than them knowing the same deep, unwavering love of Christ that had carried her through every season of her life. She was an amazing cook and baker.
Katherine leaves to cherish her memory, her children John Acosta and Jill Doverspike; Grandchildren; Nicholas (Natalie), Jordan, Dillon, Ryan, Zachary (Chelsea), and Max Acosta. Madison and Delaney Doverspike; Great Grandchildren, Hunter, Jase, Nash, Selah, and Melah Acosta; Sisters Phyllis Arellano, Anita Mitchell, Abigail (Richard) Spillman, and Shanda Nicodemus; In-Laws Margie Vigil, Pauline Acosta, Dorothy (Eric) Bubak; Numerous nieces, nephews, other relatives, and friends.
Funeral Service, 1 pm, Mon., August 4, 2025 at The Pueblo Christian Center. Interment, Roselawn Cemetery
